Yay, it’s Wednesday and 2 days to go to the weekend 😉 Hopefully I won’t have to work at work, there is ALWAYS work at home however. Was on the docks again today freshening up and setting up a couple of yachts. Will be there again tomorrow… ‘big sigh’…a woman’s work is never done!
I made BBQ chicken breast, mashed potato and coleslaw for the meat-eaters tonight (including Chloe). I am craving stuffed cabbage rolls, so have steamed the cabbage leaves and prepping the filling right now.
9 cabbage leaves, steamed or boiled till just tender
1 medium onion (finely chopped)
1clove garlic (finely chopped)
200g finely chopped mushroom
1 cup cauliflower (finely chopped)
1/2 cup white wine
Pinch of thyme
Salt and pepper to taste
125g ricotta cheese
125g cream cheese
1/2 – 3/4 cup milk
Fry onion and garlic in oil
Add mushrooms and cauliflower and fry for a few mins
Add thyme or herbs of preference, salt/pepper, wine, and cook till liquid has evaporated
Warm ricotta, cream cheese and milk together till combined and saucy
Fill cabbage leaves with a tablespoon or two of filling and roll up. Place in casserole dish, seam side down
Pour cheese sauce over the cabbage rolls and top with grated cheese
Bake at 380F for about 15 mins or till cheese is browned
