Dinner tonight was ratatouille. So good! I love one pot meals, they are quick, easy, and for me, the ultimate comfort food!
I used a generous amount of extra virgin olive oil and about 2 cloves chopped garlic. Browned that for a bit then added chopped onion. Once the onion was wilted and browning, I added 1 green pepper roughly chopped. Cooked that for a bit then added about 4 chopped tomatoes. Put the lid on and left that to cook for a while. Then added 1 large chopped eggplant and 1 large chopped zucchini. A sprinkle of thyme, basil, 1 bay leaf, salt and pepper. Covered and simmered together for about 30 mins. Yum yum, dinner is served!
