Mushroom Pinwheels

I stumbled upon a recipe for pinwheels tonight while browsing Pinterest looking for something bready that I could use for work lunch. The original recipe uses sausage but being a vegetarian, I thought I would try it out using mushrooms. End result was awesome! I think this is going to be perfect for pizza bases as well! I really liked it as they turned out crispy just like a traditional recipe using wheat flour would.

What you need:
1 1/4 cups mozzarella cheese
4 Tbs almond flour
3 Tbs coconut flour
4 Tbs melted butter
1 egg
1 tsp onion powder
225g crimini mushrooms
1/2 Tbs butter
2 Tbs cream
1/4 tsp paprika
1 green onion
1/2 cup cheddar cheese

Preheat oven to 400F
Slice mushrooms and brown in 1/2 Tbs butter.
Add cream and paprika and cook until reduced. Finely slice green onion.
Melt mozzarella in microwave at 30% power for 2 minutes.
Combine almond and coconut flour and onion powder together well. Add flour mix, egg, melted butter to melted mozzarella.
Mix together, return to microwave for 10 seconds and continue to mix till all ingredients are well combined.
Microwave for a further 10 seconds and roll out to form a rectangle.
Top with mushrooms, green onion and cheddar cheese.
Roll up and put into freezer for 10 minutes.
Cut into slices (I got 12 slices)and bake for 15 minutes.
