Cheesy Vegetable Casserole

My favourite food to eat in the world is usually a casserole or curry…..that is real comfort food for me! Reminds me of the tasty and nourishing meals Mom used to make when I was a kid!

I’ve been craving a wholesome veggie casserole, and this one really hit the spot 😍

200g crimini mushrooms, sliced
1 jalapeño pepper, sliced
1 leek, sliced
2 sticks celery, sliced
5 baby carrots, sliced
1 tbs olive oil
Salt and pepper to taste

Mix together and bake at 400F for about 20 mins

Remove from oven and add the following vegetables:

12 Cherry tomatoes, sliced in half
2 cups chopped broccoli
2 cups asparagus spears, chopped
100g room temperature cream cheese mixed together with 1 to 1 1/2 cups milk to make a sauce (microwaved for a minute or so and then combine with veg till smooth)
1/2 tsp paprika

imageContinue baking, stirring every now and then for about 20 mins.

Top with half a cup grated Parmesan cheese and bake for a further 5 mins or till Parmesan has melted.
I usually eat this dish served alone, but it would also be great

eaten with zucchini noodles or spaghetti squash.
